I’m a huge fan of LaraBars. Most feature a minimum of 5 healthy ingredients, the main component being raw dates. Out of curiosity I thought I’d see if I could whip up my own homemade version.
1.5 c whole pitted dates
1/4 c dried cranberries
1/8 c dried pumpkin seeds
1/8 c raw overnight oats (oats soaked in water overnight to soften them)
1/4 c raw almonds
(you could also add various dried fruits, nuts, seeds, chocolate etc.)
Put all ingredients in the food processor until it forms a sticky consistency.
Scoop onto wax paper, shape, and refrigerate.
After the bars have set, just cut and serve. This recipe makes about 4 bars, but you could also make 2 thicker bars.
